Yes, you can view any user's enrollments in the system by going to Admin Panel > Users > Users and searching for the specific user. Hover over the user and click to display the contextual menu, then select Course/Organization Enrollments.

A list of all this user's enrollments will appear, along with some information about them, such as the Data Source they belong to, whether they are available or not, and the role with which they are enrolled.
